1 lb (450g) chicken breast, cut into 1-inch cubes

1 ripe mango, peeled and diced

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 red bell pepper, cut into chunks

1 green bell pepper, cut into chunks

Skewers (wooden or metal)

Marinate the Chicken: In a large bowl, combine the diced mango, olive oil, soy sauce, honey, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well until a smooth marinade is formed. Add the chicken cubes and ensure they are thoroughly coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning. Once the chicken has marinated, alternate threading the chicken cubes and bell pepper chunks onto the skewers until filled.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

        Cook the Skewers: Place the skewers in a single layer in the air fryer basket. Depending on your air fryer size, you may need to cook them in batches. Cook for 10-12 minutes, turning them halfway through, until the chicken is cooked through and has a nice golden glaze.

          Check for Doneness: Ensure the chicken reaches an internal temperature of 165°F (74°C). If desired, cook for an additional 1-2 minutes until they reach your preferred crispiness.
