2 medium zucchinis, cut into fries

1 cup breadcrumbs (panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

2 large eggs

Cooking spray or olive oil spray

Prep the Zucchini: Start by washing the zucchinis thoroughly. Trim the ends and slice them into fry-like shapes, about ¼ to ½ inch thick. Pat them dry with a paper towel to remove excess moisture.

    Set Up Breading Station: In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure the spices are evenly distributed.

      Whisk the Eggs: In another shallow bowl, beat the eggs until well mixed. This will be your egg wash to help the breadcrumb mixture stick to the zucchini fries.
