4 whole wheat tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 cup bell peppers, diced (red, green, or yellow)

1 cup zucchini, diced

½ cup red onion, finely chopped

1 cup corn (fresh, canned, or frozen)

1 tsp cumin

1 tsp chili powder

½ tsp garlic powder

Salt and pepper to taste

Olive oil spray

Fresh cilantro, for garnish (optional)

Salsa or sour cream, for serving (optional)

Instructions
 

Prep the Veggies: In a mixing bowl, combine the diced bell peppers, zucchini, red onion, and corn. Add the cumin, chili powder, garlic powder, salt, and pepper. Toss until well coated.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle a layer of mozzarella cheese followed by a layer of the veggie mixture, then top with cheddar cheese. Place a second tortilla on top. Repeat this for the remaining tortillas and fillings.

      Cut the Quesadillas: Using a sharp knife or pizza cutter, cut each quesadilla into quarters to form triangles.
