1 ½ cups digestive biscuits, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Cheesecake Filling:

16 oz (450 g) cream cheese, softened

¾ cup granulated sugar

½ cup sour cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon cinnamon

2 cups fresh apples, peeled and diced (preferably Granny Smith)

For the Apple Crisp Topping:

¾ cup rolled oats

½ cup brown sugar

½ cup all-purpose flour

½ teaspoon cinnamon

¼ teaspoon salt

½ cup unsalted butter, softened

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a bowl, mix the crushed digestive biscuits, melted butter, and granulated sugar until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for about 10 minutes or until lightly golden. Remove from oven and let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese and granulated sugar using an electric mixer until smooth and creamy.

              - Add the sour cream, eggs, vanilla extract, and cinnamon. Continue mixing until fully incorporated and smooth.

                - Gently fold in the diced apples.

                  Combine and Bake:

                    - Pour the cheesecake filling over the cooled crust, spreading it evenly.
