Apple Crisp Cheesecake

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 tsp cinnamon

For the cheesecake filling:

16 oz cream cheese, softened

½ cup granulated sugar

½ cup sour cream

1 tsp vanilla extract

3 large eggs

For the apple topping:

3 medium apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp work great)

¼ cup brown sugar

1 tsp cinnamon

1 tbsp lemon juice

For the crisp topping:

¾ cup rolled oats

¾ cup all-purpose flour

½ cup brown sugar

½ tsp cinnamon

½ cup unsalted butter, melted

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for about 10 minutes, then remove and let cool.

      Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Add granulated sugar, sour cream, and vanilla extract, mixing until fully combined. Beat in the eggs one at a time, making sure not to overmix. Pour the filling onto the cooled crust and smooth the top.

        Bake the Cheesecake: Bake the cheesecake for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside with the oven door slightly ajar for about 1 hour.

          Prepare the Apple Topping: In a bowl, toss the sliced apples with brown sugar, cinnamon, and lemon juice. Spread the apples evenly over the baked cheesecake.
