Ingredients
  

6 slices of thick-cut bread (like brioche or challah), cut into cubes

2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1 cup pecans, chopped

4 large eggs

1 cup whole milk

1/2 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

Additional butter for greasing the muffin tin

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with butter.

    Prepare the Bread: In a large bowl, toss the cubed bread pieces with the diced apples and chopped pecans until well combined. Set aside.

      Whisk the Egg Mixture: In another bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until fully blended.

        Combine the Mixtures: Pour the egg mixture over the bread, apple, and pecan mixture. Gently fold to coat all the bread evenly, allowing it to soak for about 10-15 minutes.

          Fill Muffin Tin: Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full. If desired, sprinkle a few extra pecans on top for extra crunch.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the tops are golden and set.

              Cool and Serve: Remove from the oven and allow to cool in the tin for about 5 minutes. Gently run a knife around the edges to carefully lift the French toast cups out.

                Garnish: Dust with powdered sugar if desired and serve warm with extra maple syrup drizzled on top.
