Ingredients

For the Dough:

4 cups all-purpose flour, plus extra for dusting

1/4 cup granulated sugar

1/2 teaspoon salt

1 tablespoon ground cinnamon

1 tablespoon ground cardamom

2 1/4 teaspoons (1 packet) active dry yeast

1 cup whole milk, warmed to 110°F (43°C)

1/4 cup unsalted butter, melted

2 large eggs

For the Filling:

1/2 cup brown sugar, packed

2 tablespoons ground cinnamon

1 tablespoon ground cardamom

1/4 cup unsalted butter, softened

For the Glaze:

1 cup powdered sugar

2-3 tablespoons milk or heavy cream

1/2 teaspoon vanilla extract

Instructions

Prepare the Dough:

    - In a large mixing bowl, whisk together the flour, granulated sugar, salt, cinnamon, and cardamom.

      - In a small bowl, combine warm milk and yeast, allowing it to sit for about 5-10 minutes until frothy.

        - Add the melted butter and eggs to the yeast mixture, then pour it into the dry ingredients.

          - Mix until a soft dough forms, then knead on a floured surface for 8-10 minutes, or until smooth and elastic.

            Let it Rise:

              - Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.

                Prepare the Filling:

                  - In a medium bowl, mix together the brown sugar, cinnamon, and cardamom. Set aside.

                    Roll Out the Dough:

                      - Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle about 1/4 inch thick.

                        Add the Filling:

                          - Spread the softened butter over the rolled-out dough, then sprinkle the cinnamon cardamom mixture evenly over it.

                            Form the Rolls:

                              - Starting from one long side, carefully roll the dough into a tight log. Pinch the seam to seal it. Cut the log into 12 equal pieces.

                                Second Rise:

                                  - Place the rolls in a greased baking dish or on a parchment-lined baking tray. Cover and let them rise for another 30-45 minutes, until puffy.

                                    Bake:

                                      - Preheat your oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown.

                                        Prepare the Glaze:

                                          - While the rolls are baking, whisk together the powdered sugar, milk (or cream), and vanilla extract until smooth.

                                            Glaze the Rolls:

                                              - Once the rolls are done baking, allow them to cool for about 10 minutes before drizzling the glaze on top.

                                                Serve:

                                                  - Enjoy your aromatic cinnamon cardamom rolls warm, and store any leftovers in an airtight container.
