6 slices of crispy bacon, chopped

2 cups of fresh corn kernels (approximately 3-4 ears of corn)

1 large ripe avocado, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely diced

1/4 cup cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1 jalapeño, finely diced for spice

Cook the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Once done, remove it from the skillet and let it drain on paper towels. Reserve about 1 tablespoon of the bacon grease for added flavor if desired.

    Prepare the Corn: If using fresh corn, bring a large pot of water to boil. Add the corn on the cob and cook for about 3-5 minutes until tender. Remove, let cool, and then cut kernels off the cob. If using frozen corn, simply thaw it and briefly sauté in the reserved bacon grease (optional) for extra flavor.

      Combine Ingredients: In a large mixing bowl, combine the cooked corn, chopped bacon, diced avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.

        Dress the Salad: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. If you like a bit of heat, add the finely diced jalapeño to the dressing. Pour this mixture over the salad and gently toss to combine without mashing the avocado.

          Serve: Adjust seasoning if necessary and serve immediately, or refrigerate for about 30 minutes for the flavors to meld.
