Baked Buffalo Chicken Meatballs

1 lb ground chicken

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1 large egg

2 tablespoons buffalo wing sauce (plus extra for serving)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

    Mix the Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, egg, buffalo wing sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix gently until all ingredients are well incorporated. Be careful not to overmix.

      Form Meatballs: Using your hands, scoop about 1 to 2 tablespoons of the mixture and roll it into a meatball shape. Place each meatball on the prepared baking sheet. You should get about 20 meatballs.

        Bake: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and have a nice golden-brown color on the outside. You can check the internal temperature with a meat thermometer; it should read 165°F (74°C).

          Glaze with Buffalo Sauce: In a small bowl, mix a few tablespoons of buffalo wing sauce with the cooked meatballs right after you take them out of the oven for an extra kick. Toss gently to coat.

            Garnish & Serve: Transfer the glazed meatballs to a serving platter and garnish with chopped fresh parsley. Serve with extra buffalo sauce and your choice of celery sticks and ranch or blue cheese dressing on the side.
