Baked Cabbage Nest Burgers

1 medium green cabbage

1 lb ground beef (or plant-based alternative)

1/2 cup cooked quinoa

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated carrots

1 egg (or flax egg for vegan option)

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Olive oil for drizzling

Optional toppings: sliced avocado, tomato, pickles, or your favorite sauce

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare Cabbage: Carefully remove the outer leaves of the cabbage and set aside. You will need about 8-10 large leaves. Cut out the thick stem at the bottom of each leaf for easier folding.

      Make the Filling: In a large bowl, combine the ground beef (or plant-based alternative), cooked quinoa, chopped onion, minced garlic, grated carrots, egg, smoked paprika, oregano, salt, and pepper. Mix until well combined.

        Form the Nests: Take one cabbage leaf and spoon about 2-3 tablespoons of the meat mixture onto the center. Fold the sides of the leaf over the filling to create a nest. Place the nest seam-side down on the prepared baking sheet. Repeat with the remaining cabbage leaves and filling.

          Bake: Drizzle the nests with a little olive oil and gently season with additional salt and pepper. Bake in the preheated oven for 25-30 minutes or until the filling is cooked through and the cabbage is tender.
