Ingredients

For the Meatballs:

1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp salt

1/2 tsp black pepper

1/4 tsp crushed red pepper flakes (optional)

For the Subs:

4 Italian sub rolls

2 cups marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatballs:

      - In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, egg, minced garlic, oregano, basil, salt, pepper, and red pepper flakes (if using).

        - Mix the ingredients until just combined; be careful not to overmix.

          Form the Meatballs:

            - Using your hands, form the mixture into 12-16 equal-sized meatballs, approximately 1.5 inches in diameter. Place the meatballs on the prepared baking sheet.

              Bake the Meatballs:

                - Drizzle a small amount of olive oil over the meatballs, then bake in the preheated oven for 20-25 minutes or until they are golden brown and cooked through (internal temperature should reach 165°F or 75°C).

                  Heat the Marinara Sauce:

                    - While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat until warm. Stir occasionally to prevent burning.

                      Assemble the Subs:

                        - Once the meatballs are done, reduce the oven temperature to 375°F (190°C).

                          - Slice the Italian sub rolls open, being careful not to cut all the way through. Place them on a baking dish.

                            - Spoon a generous amount of marinara sauce inside each roll, followed by 3-4 meatballs per sub.

                              - Top each meatball with more marinara sauce and a handful of shredded mozzarella cheese.

                                Bake the Subs:

                                  - Bake the assembled subs in the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                                    Finish and Serve:

                                      - Once done, remove from the oven and let cool slightly. Drizzle with additional olive oil, sprinkle with fresh basil leaves if desired, and serve immediately.
