Ingredients

3 ripe yet firm bananas

2 tablespoons coconut oil (melted or softened)

1 teaspoon ground cinnamon

1 tablespoon honey or maple syrup (optional for sweetness)

Pinch of sea salt

1 tablespoon fresh lemon juice (to prevent browning)

Instructions

Preheat the Oven: Begin by preheating your oven to 200°F (93°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.

Prepare the Bananas: Peel the bananas and slice them thinly, about 1/8 inch thick for crispy chips. You can use a mandoline slicer for even thickness.

Prevent Browning: In a small bowl, combine the lemon juice with a splash of water. Dip the banana slices into this mixture briefly, then drain excess liquid. This will help maintain their color and prevent browning.

Coat the Bananas: In a mixing bowl, combine the melted coconut oil, ground cinnamon, honey or maple syrup (if using), and a pinch of sea salt. Add the banana slices to the bowl, tossing gently to coat each slice evenly.

Arrange on Baking Sheet: Lay the coated banana slices flat on the prepared baking sheet in a single layer, ensuring they do not overlap. This will ensure even baking and crispiness.

Bake: Place the baking sheet in the preheated oven and bake for 2-3 hours. Check on them occasionally; they should be golden brown and crisp. The thinner the slices, the quicker they will bake.

Cool and Store: Once baked, remove the banana chips from the oven and let them cool completely on the baking sheet. They will become even crispier as they cool. Once cooled, store them in an airtight container.

Serve: Enjoy your cinnamon banana chips as a snack, topping for yogurt, or in your favorite trail mix!
