Baked Feta and Spinach Stuffed Shells

20 jumbo pasta shells

1 cup feta cheese, crumbled

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 teaspoon dried oregano

1/2 teaspoon black pepper

1 jar (24 oz) marinara sauce

Olive oil for drizzling

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta Shells: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions, usually about 10-12 minutes, until al dente. Drain and set aside.

      Prepare the Filling: In a large mixing bowl, combine the crumbled feta cheese, chopped spinach, ricotta cheese, half of the mozzarella cheese, minced garlic, red pepper flakes (if using), oregano, and black pepper. Mix until well combined.

        Stuff the Shells: Take each pasta shell and fill it generously with the feta and spinach mixture. Place the stuffed shells upright in a 9x13 inch baking dish. Repeat until all shells are filled.

          Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring each shell is well-coated.

            Top with Cheese: Sprinkle the remaining mozzarella and grated Parmesan cheese over the top of the marinara sauced shells.

              Drizzle with Olive Oil: Lightly drizzle olive oil over the cheese topping for added richness.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
