Ingredients

4 medium zucchini (spiralized into zoodles)

1 cup freshly grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

½ teaspoon black pepper

2 tablespoons olive oil

Optional: Chopped fresh parsley for garnish

Optional: Marinara sauce for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

Prepare the Zoodles: Place the spiralized zucchini in a colander and sprinkle with a little salt. Let them sit for about 15-20 minutes to release excess moisture. Afterward, gently squeeze the zoodles to remove any remaining water.

Make the Coating: In a large mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, and black pepper. Mix well to ensure the ingredients are evenly distributed.

Coat the Zoodles: In a separate bowl, drizzle the olive oil over the zoodles and toss gently to coat. Then, take handfuls of the zoodles and dredge them in the parmesan mixture, ensuring each strand is well coated. Transfer the coated zoodles to the prepared baking sheet, spreading them out evenly.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the zoodles are tender and the coating is golden brown and crispy.

Serve: Carefully remove the zoodles from the oven and let them cool for a minute. Optionally, garnish with chopped fresh parsley for a pop of color, and serve hot with marinara sauce on the side.
