Baked Veggie Parmesan Discs

1 cup zucchini, thinly sliced

1 cup eggplant, thinly sliced

1 cup bell peppers (red, yellow, or green), thinly sliced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko or regular)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon salt

½ teaspoon black pepper

1 egg, beaten

Olive oil spray

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Veggie Prep: In a large mixing bowl, combine the zucchini, eggplant, bell peppers, cherry tomatoes, and spinach. Toss gently to mix the veggies.

      Cheese Mixture: In a separate bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, oregano, basil, salt, and pepper. Mix well until evenly combined.

        Coat the Vegetables: Pour the beaten egg into the mixed vegetables and stir until they are evenly coated. This will help the breadcrumb mixture stick to the veggies.

          Form the Discs: Take a tablespoon of the veggie mixture and form it into a disc shape, about ½ inch thick. Repeat until all the mixture is used, placing the discs on the prepared baking sheet.

            Add Breadcrumb Topping: Generously sprinkle the cheese and breadcrumb mixture over the top of each disc, making sure to cover them well. Press down lightly to ensure it sticks.
