1.5 pounds pork tenderloin

1/2 cup balsamic vinegar

1/4 cup honey

4 cloves garlic, minced

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

1 tablespoon unsalted butter (optional, for glazing)

Fresh rosemary sprigs for garnish

Marinate the Pork: In a small bowl, whisk together balsamic vinegar, honey, minced garlic, Dijon mustard, olive oil, rosemary, thyme, salt, and pepper. Place the pork tenderloin in a resealable plastic bag or shallow dish, and pour the marinade over. Seal or cover, and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: Remove the pork from the marinade, allowing excess marinade to drip off. Heat a large, oven-safe skillet over medium-high heat, then add a little olive oil. When the oil is shimmering, add the pork tenderloin and sear on all sides until browned, about 4-5 minutes per side.

        Add the Marinade: Pour the leftover marinade over the seared pork in the skillet. Drizzle with a little extra honey if desired, then bring the sauce to a gentle simmer.

          Bake: Transfer the skillet to the preheated oven, and roast the pork for about 20-25 minutes, or until a meat thermometer reads 145°F (63°C) in the thickest part of the tenderloin.

            Glaze the Pork: If using, remove the skillet from the oven and add butter to the sauce, stirring until melted and combined. Spoon the glaze over the pork to enhance its richness.

              Rest and Slice: Remove the pork from the skillet and allow it to rest for 10 minutes before slicing. This ensures the juices are retained within the meat.
