2 boneless, skinless chicken breasts

2 ripe peaches, sliced

4 cups mixed salad greens (e.g., arugula, spinach, and romaine)

1/4 cup crumbled feta cheese

1/4 cup candied pecans or walnuts

1/4 cup thinly sliced red onions

1/3 cup balsamic vinaigrette (store-bought or homemade)

Salt and pepper, to taste

Olive oil for grilling

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until they are browned and cooked through (internal temperature of 165°F). Remove from heat and let rest for 5 minutes. Slice into strips.

    Grill the Peaches: While the chicken is resting, heat a grill pan over medium-high heat. Place the peach slices on the grill, and cook for about 2-3 minutes on each side until grill marks appear and they are slightly softened. Remove from grill and set aside.
