Balsamic Strawberry Chicken

4 boneless, skinless chicken breasts

1 cup fresh strawberries, hulled and sliced

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cooked quinoa or rice, for serving (optional)

Marinate the Chicken: In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, dried thyme, salt, and pepper. Place the chicken breasts in a zip-lock bag or a shallow dish and pour the marinade over them, ensuring they're well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Preheat the Grill or Pan: Heat your grill or a large skillet over medium-high heat. If using a skillet, add a splash of olive oil.

      Cook the Chicken: Remove the chicken from the marinade (keeping the marinade for later) and add it to the grill or skillet. Cook for about 6-7 minutes on each side or until the chicken is cooked through and has an internal temperature of 165°F (75°C). Once done, transfer the chicken to a plate and cover to keep warm.
