2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond milk (or any milk of choice)

1/4 cup honey or maple syrup

1/4 cup coconut oil, melted (or unsalted butter)

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup dark chocolate chips (optional, but recommended for a delicious twist)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, honey or maple syrup, melted coconut oil, egg, and vanilla extract. Stir until well combined.

      Combine Dry Ingredients: In another bowl, whisk together the rolled oats, baking powder, baking soda, ground cinnamon, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix. If you are adding nuts and/or chocolate chips, fold them in at this stage.

          Fill Muffin Tins: Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full. You can sprinkle a few extra chocolate chips or nuts on top for an attractive finish if desired.

            Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.

              Cool: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.

                Enjoy: Serve warm or at room temperature. These muffins are perfect for breakfast, snacks, or a healthy treat!
