Ingredients

1 lb smoked brisket, chopped

1 cup BBQ sauce (your favorite style)

4 slices of sourdough bread

8 oz sharp cheddar cheese, grated

4 oz cream cheese, softened

1 tbsp Dijon mustard

1 tbsp Worcestershire sauce

2 tbsp unsalted butter, softened

1/2 tsp garlic powder

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional, for heat)

Fresh chives, chopped (for garnish)

Instructions

Prepare the Brisket Mixture: In a large mixing bowl, combine the chopped smoked brisket with the BBQ sauce, garlic powder, black pepper, and red pepper flakes (if using). Mix until the brisket is evenly coated in sauce.

Make the Cheese Spread: In a separate bowl, mix the softened cream cheese, Dijon mustard, Worcestershire sauce, and half of the grated cheddar cheese until smooth and well-blended.

Assemble the Melts: Lay out your sourdough bread slices on a clean surface. Spread a generous layer of the cheese mixture on one side of each slice. Then, portion the BBQ brisket mixture onto half of the slices (the cheese side) and top with the remaining grated cheddar cheese. Close each sandwich with another slice of bread, cheese side down.

Prepare to Grill: Heat a large skillet or a griddle over medium heat. Spread the softened butter on the outer sides of each sandwich.

Cook the Melts: Place the sandwiches in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt. Carefully flip the sandwiches and cook for an additional 3-4 minutes on the other side.

Serve with Style: Once both sides are crispy and golden, remove the melts from the skillet and let them sit for a minute before cutting in half. Garnish with chopped chives before serving.

Enjoy: Serve the BBQ Brisket Melts with extra BBQ sauce on the side for dipping, and enjoy the rich, cheesy, smoky flavors!
