BBQ Chicken Sweet Potato Bites

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 cup cooked shredded chicken (rotisserie or grilled)

1/2 cup barbecue sauce (your favorite brand or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped (for garnish)

1/2 cup shredded cheese (cheddar, mozzarella, or a blend)

Optional: sliced jalapeños for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a large mixing bowl, toss the sweet potato cubes with olive oil, smoked paprika, salt, and pepper. Spread them out in a single layer on a baking sheet.

      Roast Sweet Potatoes: Roast the sweet potatoes in the preheated oven for about 25-30 minutes, or until they are tender and slightly caramelized, flipping them halfway through cooking.

        Mix Chicken and BBQ Sauce: While the sweet potatoes are roasting, combine the shredded chicken with the barbecue sauce in a bowl. Mix well until all the chicken is coated in the sauce.

          Combine Ingredients: Once the sweet potatoes are roasted, remove them from the oven and let them cool slightly. Lower the oven temperature to 375°F (190°C).

            Assemble Bites: On a greased baking sheet or in a large oven-safe dish, place a spoonful of the BBQ chicken mixture on top of each sweet potato cube. Sprinkle with chopped red onion and shredded cheese.

              Bake Again: Return the assembled bites to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and let cool slightly. Garnish with chopped cilantro and sliced jalapeños (if using). Serve warm as an appetizer or main dish.
