1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1/2 cup BBQ sauce (your favorite brand)

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (optional for heat)

1/2 cup corn (canned or frozen)

1/2 cup red bell pepper, diced

1/2 cup red onion, diced

1/4 cup cilantro, chopped

8 small corn or flour tortillas

1 avocado, sliced

1 lime, cut into wedges

Prepare the Chickpeas: In a medium bowl, mash the chickpeas gently with a fork, leaving some whole for texture. Add olive oil, BBQ sauce, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Mix well to combine and let it sit for about 10 minutes to absorb the flavors.

    Prepare the Vegetables: While the chickpeas are marinating, chop the red bell pepper, red onion, and cilantro. If using frozen corn, steam or microwave it until heated through, then let it cool slightly.

      Combine the Salad: In a large mixing bowl, combine the mashed chickpeas with corn, diced red bell pepper, diced red onion, and chopped cilantro. Stir to mix everything evenly, adjusting seasoning with additional salt and pepper if needed.

        Warm the Tortillas: Heat a dry skillet over medium heat. Warm each tortilla for about 30 seconds on each side, or until soft and pliable. Alternatively, wrap them in a damp paper towel and microwave for about 20 seconds.
