Beef & Mushroom Country Casserole

Ingredients
  

1 lb ground beef

8 oz cremini mushrooms, sliced

1 medium onion, diced

2 cloves garlic, minced

2 cups frozen mixed vegetables (carrots, peas, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 tbsp Worcestershire sauce

1 tsp thyme

1 tsp rosemary

Salt and pepper to taste

1 ½ cups tater tots (or more as desired)

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.

      Sauté Vegetables: Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent. Stir in the sliced cremini mushrooms and cook until they soften, about 5 minutes.

        Add Remaining Ingredients: To the beef and mushroom mixture, add the frozen mixed vegetables, cream of mushroom soup, beef broth, Worcestershire sauce, thyme, and rosemary. Season with salt and pepper. Mix well until combined, and let it simmer for about 5 minutes.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Layer Tater Tots: Arrange the tater tots on top of the beef and vegetable mixture in a single layer.

              Add Cheese: Sprinkle shredded cheddar cheese over the tater tots, covering them generously.

                Bake the Casserole: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the tater tots are golden brown and crispy, and the cheese is bubbly.
