Ingredients

1 lb boneless, skinless chicken thighs

1/4 cup soy sauce

1/4 cup honey

2 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tsp cornstarch mixed with 1 tbsp water (for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a large bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and let it preheat for about 5 minutes.

Prepare the Marinade Sauce: While the chicken is marinating, pour the remaining marinade into a small saucepan. Bring it to a simmer over medium heat. Stir in the cornstarch mixture and cook until the sauce thickens, about 2-3 minutes. Remove from heat and set aside.

Air Fry the Chicken: Remove the chicken from the marinade and place it in the air fryer basket in a single layer. Cook for 12-15 minutes, flipping halfway through, until the chicken is crispy and reaches an internal temperature of 165°F (75°C).

Glaze the Chicken: Once the chicken is cooked, brush the thickened teriyaki sauce over the chicken thighs to glaze them. Cook for an additional 2-3 minutes to caramelize the sauce slightly.

Serve: Remove the chicken from the air fryer and let it rest for 5 minutes. Slice the chicken and serve it over rice or noodles. Drizzle with extra teriyaki sauce, if desired, and garnish with chopped green onions and sesame seeds.
