1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 cups button mushrooms, sliced

1 medium onion, thinly sliced

4 cloves garlic, minced

1 inch ginger, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon black pepper (adjust to taste)

1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)

3 tablespoons vegetable oil (divided)

2 green onions, chopped (for garnish)

Marinate the Chicken: In a mixing bowl, combine the chicken, soy sauce, oyster sauce, black pepper, and a pinch of salt. Mix well and let it marinate for about 30 minutes at room temperature.

    Prepare the Ingredients: While the chicken marinates, clean and slice the mushrooms, thinly slice the onion, and mince the garlic and ginger.

      Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

        Cook the Chicken: Add the marinated chicken to the skillet in a single layer. Sear for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

          Sauté Vegetables: In the same pan, add the remaining 1 tablespoon of vegetable oil. Toss in the onions, garlic, and ginger, stirring constantly for about 2 minutes until fragrant.

            Add the Mushrooms: Now, add the sliced mushrooms to the pan and cook for an additional 3-4 minutes until they become tender and golden.

              Combine and Thicken: Return the cooked chicken to the pan with the vegetables. Stir to combine. Add the cornstarch mixture and stir well to thicken the sauce, cooking for 2-3 more minutes. Adjust the seasoning if necessary with extra black pepper or salt.
