1 medium head of cauliflower, chopped into small florets

6 slices of bacon, chopped

1 cup cherry tomatoes, halved

1/2 cup green onions, sliced (white and green parts)

1 cup romaine lettuce, chopped

1/4 cup mayonnaise

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Cauliflower: Bring a pot of salted water to a boil. Add the cauliflower florets and cook for about 3-4 minutes until they are tender yet still crisp. Drain and transfer them to a bowl of ice water to halt the cooking process. Once cooled, drain again and pat dry.

    Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Remove the bacon from the skillet and let it drain on paper towels to absorb excess grease.

      Make the Dressing: In a small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper until smooth and well combined.
