For the Blueberry Chia Jam:

2 cups fresh or frozen blueberries

2 tablespoons chia seeds

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lemon juice

Pinch of salt

For the Crust and Topping:

1 cup rolled oats

1 cup almond flour (or any flour of choice)

1/3 cup coconut oil, melted (or unsalted butter)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

Instructions
 

Make the Blueberry Chia Jam:

    - In a medium saucepan over medium heat, combine the blueberries, honey (or maple syrup), lemon juice, and salt. Cook for about 5-7 minutes, stirring occasionally, until the blueberries start to break down and release their juices.

      - Stir in the chia seeds and continue to cook on low for another 2-3 minutes until the mixture thickens. Remove from heat and let it cool while you prepare the crust.

        Prepare the Crust:

          - Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

            - In a mixing bowl, combine the rolled oats, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, salt, and cinnamon (if using). Mix until the ingredients are well combined and form a crumbly dough.

              - Reserve 1/2 cup of the mixture for topping the bars. Press the remaining mixture firmly into the bottom of the prepared baking dish to create an even layer.

                Assemble the Bars:

                  - Spread the blueberry chia jam evenly over the crust, ensuring it covers the entire surface.

                    - Sprinkle the reserved oat mixture over the jam layer, creating an even topping.

                      Bake:

                        - Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is lightly golden and firm to the touch.

                          - Remove from the oven and allow the bars to cool completely in the pan.

                            Serve:

                              - Once cooled, lift the bars out of the pan using the parchment overhang. Cut into squares or rectangles, and enjoy! These bars can be stored in an airtight container in the fridge for up to a week.
