For the Crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, softened

¼ teaspoon salt

For the Lemon Blueberry Filling:

3 large eggs

1 cup granulated sugar

Zest of 2 lemons

½ cup freshly squeezed lemon juice (about 2-3 lemons)

1 teaspoon vanilla extract

½ cup all-purpose flour

1 ½ cups fresh blueberries

Powdered sugar, for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

    Make the Crust: In a medium bowl, mix together 1 ½ cups flour, ½ cup powdered sugar, and ¼ teaspoon salt. Add the softened butter and combine using a pastry cutter or your fingers until it resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 15-20 minutes or until lightly golden. Remove from the oven and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, whisk together 3 large eggs and 1 cup granulated sugar until well combined. Add the zest and juice of the lemons and the vanilla extract, and whisk until smooth. Gently stir in ½ cup flour until just incorporated.

        Add the Blueberries: Fold in the fresh blueberries carefully to avoid crushing them. The mixture will be slightly thick but pourable.

          Bake: Pour the blueberry lemon filling over the pre-baked crust, spreading it evenly. Bake for an additional 25-30 minutes, or until the filling is set and the edges are lightly golden. A toothpick inserted into the center should come out clean.

            Cool and Serve: Allow the bars to cool at room temperature for at least 1 hour before refrigerating for at least 2 hours to set properly. Once fully chilled, dust the top with powdered sugar, slice into squares, and serve.
