Ingredients

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

1 cup fresh blueberries (or frozen, if out of season)

Zest of 1 large lemon

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

Additional sugar for sprinkling on top (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Incorporate the Butter: Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingers, blend the butter into the flour until it resembles coarse crumbs.

Add Blueberries and Zest: Gently fold in the blueberries and lemon zest, being careful not to crush the berries.

Combine Wet Ingredients: In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well incorporated.

Combine Wet and Dry: Pour the wet mixture into the dry ingredients and mix gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.

Form the Dough: Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut into 8 wedges or use a round cutter for a classic scone shape.

Transfer and Sprinkle: Place the scones on the prepared baking sheet. If desired, sprinkle a little sugar on top of each scone for added sweetness and crunch.

Bake: Bake in the preheated oven for 15-20 minutes, or until the scones are golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Let the scones cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Enjoy them warm or at room temperature!
