1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup plain Greek yogurt

1/2 cup granulated sugar

1/4 cup honey

2 large eggs

1/4 cup vegetable oil (or melted coconut oil)

Zest of 1 lemon

1 tablespoon fresh lemon juice

1 cup fresh blueberries (or frozen, if out of season)

Optional: 1/2 teaspoon vanilla extract

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and line a 9x5-inch loaf pan with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt until well combined. Set aside.

      Combine Wet Ingredients: In a large mixing bowl, place the Greek yogurt, granulated sugar, and honey. Use a whisk to blend them together until the sugar is partially dissolved. Add in the eggs, vegetable oil, lemon zest, lemon juice, and vanilla extract (if using). Mix until smooth.

        Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix, as this can result in a dense loaf.

          Fold in Blueberries: Gently fold in the blueberries to the batter, ensuring they are evenly distributed without breaking them apart.

            Pour and Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
