4 large flour tortillas

6 large eggs

1 cup shredded cheddar cheese

1 cup cooked and crumbled chorizo (or sausage of your choice)

1 medium bell pepper, diced (any color)

1 small onion, diced

1 ripe avocado, sliced

1 cup fresh spinach

1/4 cup fresh cilantro, chopped

1/2 teaspoon ground cumin

Salt and pepper to taste

1 tablespoon olive oil

Salsa and sour cream for serving (optional)

Instructions
 

Prep the Veggies: Start by dicing the bell pepper and onion, and chopping the cilantro. Set aside.

    Cook the Chorizo: In a large skillet over medium heat, add the crumbled chorizo. Cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside, leaving the drippings in the pan.

      Sauté the Veggies: In the same skillet with the chorizo drippings, add olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until the onions are translucent. Add the fresh spinach and cook until wilted.

        Whisk the Eggs: In a bowl, whisk together the eggs, cumin, salt, and pepper. Pour into the skillet with the veggies. Gently stir and cook until the eggs are fully scrambled and just set.

          Combine Ingredients: Once the eggs are scrambled, reduce the heat to low. Add the cooked chorizo and half of the shredded cheese to the egg mixture. Stir until everything is combined and the cheese is melted through.

            Assemble the Burritos: Lay out each tortilla on a flat surface. Spoon the egg, chorizo, and cheese mixture onto the center of each tortilla. Top with avocado slices and cilantro.

              Fold the Burritos: Fold the sides of each tortilla over the filling, then roll up from the bottom to form a tight burrito.

                Toast the Burritos: In the same skillet, place the burritos seam-side down. Toast each side for about 2-3 minutes until golden brown and slightly crispy.
