4 medium zucchinis

2 cups shredded cooked chicken (rotisserie chicken works great)

1/2 cup hot wing sauce (Frank’s RedHot or your favorite brand)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

1/4 cup green onions, chopped

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchinis: Cut the zucchinis in half lengthwise and scoop out the center using a spoon to create boats. Make sure to leave enough flesh so they hold their shape. Drizzle with olive oil and season with salt and pepper.

      Make the Filling: In a large bowl, combine the shredded chicken, hot wing sauce, cream cheese, half of the cheddar cheese, and crumbled blue cheese (if using). Mix well until combined.

        Fill the Zucchini Boats: Spoon the buffalo chicken mixture evenly into the hollowed zucchini halves.
