Buffalo Chickpea & Ranch Pita Pizzas

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1/4 cup hot sauce (Buffalo sauce)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 whole wheat pita breads

1 cup shredded mozzarella cheese

1/2 cup ranch dressing

1/4 cup diced green onions

1/4 cup crumbled blue cheese (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Chickpeas: In a bowl, toss the drained chickpeas with olive oil, hot sauce, garlic powder, onion powder, salt, and pepper. Make sure the chickpeas are well-coated.

    Roast the Chickpeas: Preheat your oven to 425°F (220°C). Spread the seasoned chickpeas out on a baking sheet and roast for 20 minutes or until crispy, tossing halfway through.

      Assemble the Pita Pizzas: While the chickpeas are roasting, place the whole wheat pita breads on a baking sheet. Evenly distribute the shredded mozzarella cheese on each pita. Once the chickpeas are done, remove them from the oven and sprinkle them generously over the cheese.

        Bake the Pita Pizzas: Place the baking sheet in the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.

          Drizzle with Ranch Dressing: Carefully remove the pita pizzas from the oven. Drizzle ranch dressing evenly over each pizza and top with diced green onions and crumbled blue cheese, if using.

            Serve: Garnish with fresh cilantro or parsley, if desired. Slice into wedges and serve warm.
