Ingredients

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped pecans, toasted

1/2 cup mini chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.

Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt until evenly blended.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

Fold in Pecans: Gently fold in the chopped toasted pecans and mini chocolate chips (if using) until they are evenly distributed throughout the dough.

Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden and the centers look slightly soft.

Cool: Remove the cookies from the oven, let them cool on the baking sheets for about 5 minutes, then transfer them to wire racks to cool completely.
