1 medium head of green cabbage, chopped

12 oz smoked sausage ( kielbasa or andouille), sliced

1 large onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper, to taste

1 cup low-sodium chicken broth

2 tablespoons apple cider vinegar

Fresh parsley, chopped, for garnish

Prepare the Ingredients: Begin by chopping the cabbage into bite-sized pieces, slicing the sausage, and dicing the onion. Mince the garlic and set aside.

    Sauté the Vegetables: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until it starts to become translucent.

      Add Garlic & Sausage: Stir in the minced garlic and sliced smoked sausage, cooking for another 3-4 minutes until the sausage is browned and fragrant.

        Include Cabbage & Seasonings: Add the chopped cabbage into the skillet and sprinkle with smoked paprika, crushed red pepper flakes, salt, and pepper. Stir everything together to coat the cabbage evenly with the spices.

          Simmer with Broth: Pour in the chicken broth and apple cider vinegar. Bring the mixture to a gentle simmer, cover, and let cook for about 15-20 minutes or until the cabbage is tender, stirring occasionally.

            Final Touches: Once the cabbage is soft, taste and adjust seasoning if necessary. If you prefer a more intense flavor, let the dish simmer uncovered for an additional 5 minutes.
