Ingredients

4 boneless, skinless chicken breasts

2 cups fresh mozzarella cheese, sliced

2 medium tomatoes, sliced

1 cup fresh basil leaves

1/2 cup balsamic vinegar

2 tablespoons honey

3 tablespoons olive oil

3 cloves garlic, minced

Salt and pepper to taste

Optional: A sprinkle of Italian seasoning for extra flavor

Instructions

Marinate the Chicken:

    - In a resealable plastic bag or shallow dish, mix 3 tablespoons of olive oil, minced garlic, salt, pepper, and optional Italian seasoning. Add the chicken breasts, seal or cover, and marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

      Prepare the Balsamic Glaze:

        - In a small saucepan over medium heat, combine the balsamic vinegar and honey. Bring to a simmer and reduce the heat to low. Let it cook until it thickens and coats the back of a spoon, about 10-15 minutes. Remove from heat and set aside.

          Cook the Chicken:

            - Preheat the grill or a skillet over medium-high heat. Remove the chicken breasts from the marinade and let any excess drip off. Grill or sauté the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. If using a skillet, add a drizzle of olive oil if needed.

              Assemble the Caprese Chicken:

                - Once the chicken is cooked, place slices of fresh mozzarella on top of each breast, followed by slices of tomato and a generous handful of fresh basil leaves. Cover the skillet with a lid for 2-3 minutes to allow the cheese to melt.

                  Drizzle and Serve:

                    - Transfer the cheesy, tomato-topped chicken to a serving platter. Drizzle with the balsamic glaze and garnish with additional basil leaves if desired. Serve warm with a side of your favorite salad or grilled vegetables.
