Ingredients

2 slices of sourdough bread

1 tablespoon butter, softened

4 ounces fresh mozzarella cheese, sliced

1 medium ripe tomato, sliced

1/4 cup fresh basil leaves

1 tablespoon balsamic glaze

Salt and pepper, to taste

Instructions

Prepare the Bread: Spread the softened butter evenly on one side of each slice of sourdough bread. This will help achieve a golden, crispy crust when grilling.

Assemble the Sandwich: Place one slice of bread, buttered side down, on a clean surface. Layer half of the fresh mozzarella cheese on the slice, followed by the tomato slices and fresh basil leaves. Drizzle the balsamic glaze over the basil, then sprinkle with salt and pepper to taste.

Finish Layering: Add the remaining mozzarella cheese on top of the basil, then cover with the second slice of bread, buttered side up.

Grill the Sandwich: Heat a skillet over medium heat. Carefully place the assembled sandwich in the skillet. Cook for about 3-5 minutes, or until the bottom is golden brown and the cheese begins to melt.

Flip and Cook: Using a spatula, gently flip the sandwich over and cook for another 3-5 minutes until the second side is golden brown and the cheese has completely melted.

Serve: Remove the sandwich from the skillet and let it rest for a minute before slicing it in half. Serve warm with extra balsamic glaze for dipping if desired.
