Caprese Pasta Salad

8 oz. pasta (fusilli or gemelli work great)

1 ½ cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, torn

½ cup extra virgin olive oil

3 tablespoons balsamic vinegar

1 clove garlic, minced

Salt and pepper, to taste

A pinch of red pepper flakes (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, minced garlic, salt, pepper, and red pepper flakes (if using). Set aside.

      Combine Ingredients: In a large mixing bowl, add the cooled pasta, halved cherry tomatoes, mozzarella balls, and torn basil leaves.

        Dress the Salad: Pour the dressing over the pasta mixture. Gently toss until everything is well coated.
