Caramel Apple Baked Oatmeal Cups

2 cups rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

2 cups milk (dairy or non-dairy)

1/4 cup maple syrup (or honey)

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 medium apple, peeled and diced (preferably Granny Smith or Honeycrisp)

1/2 cup caramel sauce (store-bought or homemade)

Optional toppings: chopped nuts (such as walnuts or pecans), more caramel sauce, or whipped cream

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line with silicone muffin cups.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir until well mixed.

      Combine Wet Ingredients: In another bowl, whisk together the milk, maple syrup (or honey), applesauce, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry oat mixture. Stir in the diced apple until evenly distributed. The mixture will be quite liquidy, which is perfect for soaking the oats.

          Fill Muffin Tin: Using a ladle or measuring cup, evenly distribute the oatmeal mixture into the muffin tins, filling each cup about three-quarters full.

            Add Caramel: Drizzle about a teaspoon of caramel sauce on top of each oatmeal cup. You can swirl it in if desired or leave it on top for a gooey finish.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool: Once baked, remove from the oven and allow to cool in the muffin tin for about 5 minutes. Then, transfer to a wire rack to cool completely.

                  Serve: Serve warm or at room temperature. Drizzle with additional caramel sauce and top with chopped nuts or whipped cream if desired.
