For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon cinnamon

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

¼ cup sour cream

1 cup finely chopped apples (about 2 medium apples, peeled and cored)

½ teaspoon ground cinnamon

For the caramel topping:

1 cup caramel sauce (store-bought or homemade)

¼ cup chopped pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (163°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the Crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, sugar, and cinnamon until evenly moistened. Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and let cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the granulated sugar and continue mixing until combined.

        Add Eggs and Flavor: Mix in the vanilla extract. Add the eggs one at a time, beating well after each addition. Make sure to scrape down the sides of the bowl as needed. Finally, add the sour cream and mix until smooth.

          Incorporate the Apples: Gently fold in the chopped apples and ground cinnamon until they are evenly distributed throughout the cheesecake mixture.

            Combine Layers: Pour the cheesecake filling over the cooled graham cracker crust. Spread it evenly with a spatula.
