Caramelized Onion and Goat Cheese Tart

1 sheet of puff pastry (thawed if frozen)

3 large yellow onions, thinly sliced

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon sugar

1 teaspoon salt

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

4 ounces goat cheese, crumbled

1 large egg

1 tablespoon heavy cream

Cracked black pepper, to taste

Fresh arugula or mixed greens, for garnish (optional)

Balsamic glaze, for drizzling (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Caramelize Onions: In a large skillet over medium heat, add olive oil and butter. Once melted, add the sliced onions, salt, and sugar. Cook for about 25-30 minutes, stirring occasionally, until the onions are soft and caramelized (they should be golden brown and reduced in volume). Stir in fresh thyme in the last few minutes.

      Prepare Puff Pastry: While the onions are caramelizing, roll out the thawed puff pastry on a lightly floured surface to fit a 9-inch tart pan or baking sheet. Trim the edges if necessary and prick the pastry all over with a fork to prevent it from puffing excessively. Place it in the refrigerator while you finish the onions.

        Mix Egg and Cream: In a small bowl, whisk together the egg and heavy cream until well combined.

          Assemble the Tart: Remove the pastry from the refrigerator and spread the caramelized onions evenly over the base. Sprinkle the crumbled goat cheese on top. Drizzle the egg mixture over the cheese and onions to help bind everything together. Finish with a sprinkle of cracked black pepper.

            Bake: Place the assembled tart in the preheated oven and bake for 20-25 minutes, or until the pastry is golden brown and puffed, and the cheese is slightly browned.

              Serve: Once out of the oven, let it cool for a few minutes. Slice into wedges and serve warm, garnished with fresh arugula or mixed greens and a drizzle of balsamic glaze if desired.
