1 sheet of puff pastry (thawed if frozen)

2 large onions (thinly sliced)

2 tablespoons olive oil

1 tablespoon unsalted butter

1 tablespoon balsamic vinegar

1 teaspoon sugar

4 oz goat cheese (crumbled)

2 tablespoons fresh thyme leaves (or 1 tablespoon dried thyme)

Salt and pepper to taste

1 egg (beaten, for egg wash)

1 tablespoon honey (optional, for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Caramelize the Onions:

      - In a large skillet, heat the olive oil and butter over medium heat.

        - Add the sliced onions, and cook slowly for about 20-25 minutes, stirring frequently until they are soft and golden brown.

          - Sprinkle in the sugar and pour the balsamic vinegar over the onions. Stir well and cook for an additional 5 minutes. Season with salt and pepper to taste. Remove from heat and let cool slightly.

            Prepare the Puff Pastry:

              - On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases and trim it into a rectangle or circles, depending on your preferred tart shape.

                - If using a tart pan, fit the pastry into the pan, leaving an overhang of about 1 inch.

                  Assemble the Tarts:

                    - Evenly spread the caramelized onions over the pastry, leaving a small border around the edges.

                      - Sprinkle the crumbled goat cheese and fresh thyme on top of the onions.

                        Egg Wash:

                          - Brush the edges of the pastry with the beaten egg to give it a golden color when baked.
