Caramelized Onion Pasta with Chilli Oil

12 oz (340g) spaghetti or fettuccine

3 large onions, thinly sliced

4 tablespoons olive oil (divided)

1 teaspoon sugar

1 teaspoon salt (or to taste)

2 cloves garlic, minced

½ teaspoon red pepper flakes (adjust based on spice preference)

1/4 cup freshly grated Parmesan cheese

Fresh basil leaves for garnish

Salt and pepper to taste

2 tablespoons chili oil (store-bought or homemade)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Caramelize the Onions: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions, salt, and sugar. Cook the onions slowly, stirring occasionally for about 20-25 minutes, or until they are golden brown and caramelized. If they begin to stick, you can add a splash of water to loosen them.

      Add Garlic and Spice: Once the onions are caramelized, add the minced garlic and red pepper flakes to the skillet. Sauté for an additional 2-3 minutes until the garlic is fragrant.

        Combine with Pasta: Add the cooked pasta to the skillet with the onions and garlic. Pour in the reserved pasta water a little at a time until you reach your desired consistency. Mix well to combine.

          Finalize Flavor: Drizzle the remaining 2 tablespoons of olive oil and the chili oil over the pasta. Toss to combine. Add salt and pepper to taste, and sprinkle the freshly grated Parmesan cheese on top.

            Garnish and Serve: Serve hot, garnished with fresh basil leaves and a sprinkle of extra Parmesan if desired.
