Caramelized Peach and Brie Grilled Sandwiches

2 ripe peaches, sliced

1 tablespoon unsalted butter

1 tablespoon brown sugar

1/2 teaspoon cinnamon

8 slices of good-quality bread (sourdough or ciabatta work well)

8 ounces Brie cheese, sliced

1 tablespoon honey

Fresh basil leaves (optional)

4 tablespoons olive oil or softened butter for grilling

Pinch of salt

Caramelize the Peaches: In a medium skillet over medium heat, melt the butter. Add the sliced peaches and cook for about 2 minutes until slightly softened. Sprinkle the brown sugar and cinnamon over the peaches, tossing to coat. Continue to cook for another 3-4 minutes until the peaches are caramelized. Remove from heat and set aside.

    Prepare the Bread: Lay out the slices of bread on a clean surface. Drizzle or spread one side of each slice with olive oil or softened butter.

      Assemble the Sandwiches: On the non-oiled side of four bread slices, layer slices of Brie cheese. Top with the caramelized peaches, and drizzle with honey. If using, add a few fresh basil leaves on top of the peaches for an extra flavor kick. Cover each with another slice of bread, oiled side up.
