2 heads of romaine lettuce

2 cups grilled chicken breast, sliced

1 cup Caesar dressing

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup croutons, crushed

Fresh lemon juice (from 1 lemon)

Olive oil (for grilling)

Salt and pepper to taste

4 large whole wheat tortillas or wraps

Instructions
 

Prep the Romaine: Start by rinsing the romaine heads under cold water to remove any dirt. Dry them thoroughly with a kitchen towel. Cut the romaine heads in half lengthwise.

    Preheat the Grill: Heat your grill or grill pan over medium-high heat. Lightly brush the cut sides of the romaine halves with olive oil and sprinkle with salt and pepper.

      Grill the Romaine: Once the grill is hot, place the romaine halves cut-side down on the grill. Grill for about 2-3 minutes until you see nice grill marks and the lettuce is slightly wilted but still crisp. Remove from the grill and set aside.

        Assemble the Wraps: Lay a tortilla flat on a clean surface. Start by placing a few grilled romaine halves on one side of the tortilla. Add slices of grilled chicken breast, a drizzle of Caesar dressing, a sprinkle of grated Parmesan cheese, a handful of cherry tomatoes, and crushed croutons. Squeeze fresh lemon juice over the toppings for an extra zing.

          Wrap It Up: Fold in the sides of the tortilla and then roll it tightly from the bottom up, ensuring all the ingredients are securely tucked inside.

            Slice and Serve: Cut the wrap in half at a diagonal for an appealing presentation. If desired, serve with additional Caesar dressing for dipping and a sprinkle of extra Parmesan cheese on top.
