Ingredients

2 pounds russet potatoes, peeled and cubed

6 strips of bacon, cooked until crispy and crumbled

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened

½ cup sour cream

½ cup milk

4 tablespoons unsalted butter, melted

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

¼ cup green onions, chopped (for garnish)

Instructions

Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain and return potatoes to the pot.

Mash the Potatoes: Using a potato masher, mash the potatoes until smooth. While mashing, mix in the softened cream cheese, sour cream, and melted butter. Incorporate the milk gradually until desired creaminess is achieved.

Add the Flavors: Stir in the garlic powder, onion powder, salt, and pepper. Mix well to ensure all ingredients are combined evenly.

Incorporate the Cheese and Bacon: Fold in ¾ cup of the shredded cheddar cheese and the crumbled bacon into the mashed potatoes. Reserve the remaining cheese and bacon for topping.

Transfer to Baking Dish: Preheat your oven to 350°F (175°C). Spread the mashed potato mixture evenly into a greased 9x13-inch baking dish.

Top the Casserole: Sprinkle the reserved cheese and the remaining crumbled bacon over the top of the mashed potato mixture.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until heated through and the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Sprinkle with chopped green onions before serving for a pop of color and freshness.
