1 ½ cups all-purpose flour

1 cup rolled oats

⅓ cup granulated sugar

½ cup brown sugar, packed

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted

1 large egg

For the Cherry Filling:

2 cups fresh or frozen cherries, pitted and halved

¼ cup granulated sugar

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 tablespoon lemon juice

Optional Topping:

Powdered sugar for dusting

Prepare the Cherry Filling:

    - In a medium bowl, combine the pitted cherries, sugar, cornstarch, vanilla extract, and lemon juice. Mix well and set aside to marinate for about 10-15 minutes.

      Preheat Oven:

        - Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

          Make the Crust and Crumble:

            - In a large mixing bowl, whisk together the flour, oats, granulated sugar, brown sugar, baking powder, salt, and cinnamon.

              - Pour in the melted butter and add the egg. Mix until the ingredients are combined and a crumbly dough forms.

                Layer the Bars:

                  - Take about two-thirds of the crumble mixture and press it firmly into the bottom of the prepared baking pan to form the base.

                    - Spread the cherry filling evenly over the crust, making sure to distribute the cherries well.

                      - Crumble the remaining one-third mixture over the cherry filling evenly, covering it.

                        Bake:

                          - Bake in the preheated oven for 35-40 minutes or until the top is golden brown and the cherry filling is bubbling slightly at the edges.

                            Cool and Serve:

                              - Remove from the oven and let it cool in the pan for at least 15 minutes. Then, lift out the bars using the parchment paper (if used) and allow them to cool completely on a wire rack.
