Ingredients

1 cup (200g) granulated sugar

1/2 cup (100g) packed brown sugar

1/2 cup (120ml) vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup (125g) all-purpose flour

1/3 cup (40g) unsweetened cocoa powder

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup (90g) semi-sweet chocolate chips

1/4 cup (30g) powdered sugar (for coating)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined. Then, add the eggs one at a time, followed by the vanilla extract, and continue to mix until smooth and glossy.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated. Be careful not to overmix.

Add Chocolate Chips: Gently fold in the semi-sweet chocolate chips to the cookie dough, ensuring they are evenly distributed throughout.

Chill the Dough: Cover the bowl with plastic wrap and refrigerate the cookie dough for at least 2 hours, or overnight for best results. This step is crucial for achieving the chewy texture.

Preheat the Oven: When you’re ready to bake, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Form Cookies: Using a cookie scoop or your hands, portion out the chilled dough and roll it into balls about 1 inch in diameter. Roll each ball in powdered sugar until fully coated.

Bake the Cookies: Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the tops have cracked and are set.

Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious chewy chocolate crinkle cookies!
