Ingredients

1 cup almond butter (smooth or crunchy)

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1/2 cup almond flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup chopped almonds (optional, for extra crunch)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, maple syrup (or honey), melted coconut oil, and vanilla extract. Mix until smooth and evenly combined.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, almond flour, baking soda, and salt until well mixed.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredient mixture. Stir until the dough is well combined and no dry streaks remain. It should be thick and slightly sticky.

Add Chocolate Chips: Fold in the dark chocolate chips and chopped almonds (if using) into the batter until evenly distributed.

Spread in Pan: Transfer the bar mixture into the prepared baking pan. Use a spatula or your hands to press it firmly into an even layer.

Bake: Bake in the preheated oven for 20-25 minutes, or until the edges start to turn golden brown and a toothpick inserted in the center comes out clean.

Cool: Once baked, remove the bars from the oven and allow them to cool in the pan for about 10 minutes. Then, lift the bars out using the parchment paper and let them cool completely on a wire rack.

Cut and Serve: After cooling, cut into squares or rectangles. Enjoy them right away, or store in an airtight container at room temperature or in the refrigerator for up to a week.
