Ingredients

For the Brownies:

1 cup (2 sticks) unsalted butter

2 cups granulated sugar

4 large eggs

2 teaspoons vanilla extract

1 cup all-purpose flour

1 cup cocoa powder

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

For the Cookie Dough Filling:

1/2 cup (1 stick) unsalted butter, softened

1/4 cup granulated sugar

3/4 cup brown sugar, packed

2 teaspoons vanilla extract

1 cup all-purpose flour (heat-treated if desired)

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips

For the Coating:

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (or vegetable oil)

Instructions

Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan or line it with parchment paper.

    Prepare the Brownie Batter:

In a large mixing bowl, melt 1 cup of unsalted butter. Once melted, whisk in 2 cups of granulated sugar until combined. Add in the eggs, one at a time, mixing well after each addition. Stir in 2 teaspoons of vanilla extract.

        Combine Dry Ingredients:

In another bowl, sift together 1 cup of all-purpose flour, 1 cup of cocoa powder, and 1/2 teaspoon of salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in 1 cup of semi-sweet chocolate chips.

            Bake the Brownies:

Pour the brownie batter into the prepared baking pan, smoothing out the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the brownies to cool completely in the pan on a wire rack.

                Make the Cookie Dough Filling:

In a medium bowl, cream together 1/2 cup softened butter, 1/4 cup granulated sugar, and 3/4 cup brown sugar until creamy. Mix in 2 teaspoons of vanilla extract. Gradually add in 1 cup of all-purpose flour and 1/4 teaspoon salt until fully combined. Fold in 1/2 cup of chocolate chips.

                    Form the Cookie Dough Balls:

Once the brownies are cooled, scoop out a small amount of brownie (about a tablespoon) and flatten it in your palm. Place a small ball (about 1 teaspoon) of cookie dough in the center and wrap the brownie around the cookie dough, rolling it into a ball. Repeat until all the brownie and cookie dough are used.

                        Prepare the Chocolate Coating:

In a microwave-safe bowl, combine 1 cup of semi-sweet chocolate chips and 1 tablespoon of coconut oil. Melt in the microwave, stirring every 30 seconds, until smooth.

                            Coat the Brownie Bombs:

Dip each brownie ball into the melted chocolate mixture, ensuring it is completely coated. Place on a parchment-lined baking sheet. Once all are coated, refrigerate the brownie bombs for at least 30 minutes to set the chocolate.

                                Serve and Enjoy:

Enjoy your Chocolate Chip Cookie Dough Brownie Bombs chilled or at room temperature. Store any leftovers in an airtight container in the fridge for up to one week.
